Here are references to The Legendary Starfy in Nintendo Power. This includes one scan of a page of an interview with Hitoshi Yamagami I could only find the first/second page of. I don't have scans from Volume 259 though, which apparently shows someone's fan Starfy plush.
I live in the UK, so it's a shame we never got anything like this in ONM.
