Well, I find hard to choose one, but, from the 4 I have played (I am on my way through Spirit Temple now, and I am missing Time Temple), I guess my favorite is the Fire Temple, followed by Forest.

Forest Temple! :D I love the song that plays inside, and it's... really nostalgic for me for some reason. I can't quite place my finger on it. So weird. But I love it nonetheless.

Shadow. It got rid of my fear of Wall/Floormasters, ReDeads, and Gibdos. :D

It's hard to say, since all of them are memorable.  I voted Shadow in the end, but I almost went for Water, Fire, Forest, Spirit...
